I don't because the air in Northeast Wisconsin is usually very dry, and my gun cabinet is in a dry & climate controlled location. If you're in a location with higher humidity or salt air (like FLA) or if the safe is in a humid area like a basement, you should consider dessicant or a Golden Rod type device.

I take them out and wipe them down occasionally, although most of my guns get fired at least occasionally, and I clean and lightly oil them after each use. I also keep each gun in a silicone treated gun sock, to prevent "safe nicks".

I personally don't like the idea of keeping a gun in a plastic baggie, seems like that could trap moisture.
